Baked Sweet Potato Fries: Baked Sweet Potato Fries

I have always preferred french fries made with russet potatoes, instead of sweet potatoes. But for some reason I decided to try making some sweet potato fries. Mainly because the recipe said that would get nice and crispy.

Turns out these sweet potatoes fries do get crispy. I just wish I had cut them a bit smaller, so they would have crisped up even more. The only downside to these fries is that they do not reheat well, much like french fries made with russet potatoes.

Baked Sweet Potato Fries

Ingredients:

  • 3 medium medium sweet potatoes, cut into 1/4 inch sticks
  • 3 tablespoon cornstarch
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon coriander
  • 1/8 teaspoon cumin
  • 3 tablespoon canola oil

Directions:

  1. Place the sweet potatoes in a large bowl and add enough cold water to cover the fries. Allow to sit for at least 1 hour.
  2. Rip off a piece of parchment paper to fit a rimmed baking sheet and set aside.
  3. Place the baking sheet, without the parchment, in the oven and preheat the oven and baking sheet to 450º F.
  4. Drain the sweet potato fries and place in a large plastic bag.
  5. Add in the cornstarch, paprika, garlic powder, black pepper, cayenne pepper, coriander and cumin.
  6. Seal the bag leaving some air in the bag and shake until the fries are evenly coated.
  7. Open the bag an drizzle in the canola oil. Seal the bag again and shake until the fries are evenly coated in oil.
  8. Remove the hot baking sheet from the oven and carefully place the parchment paper on it.
  9. Carefully spread the fries onto the hot baking sheet.
  10. Bake for 20 minutes, then toss and turn the fries. Bake for 10-15 more minutes, or until crispy and golden brown.
  11. Remove from the oven and let sit for 5 minutes.

Notes:
The original recipe has 2 teaspoon of salt added to the soaking water and then the fries are sprinkled with sea salt immediately after coming out of the oven. I left out the salt but feel free to add it if you would like.
