I have a favorite brand of barbecue that has many different flavors to choose from. So, I never really thought about making my own. But thanks to Pinterest I can now say I have made my own barbecue sauce and it was delicious.
Mango Chipotle Barbecue Sauce
Ingredients:
- 1/4 fresh mango, peeled and chopped
- splash of water
- 1/2 cup ketchup
- 1 teaspoon chipotles in adobo sauce, finely chopped
- 1 clove garlic, minced
- 1/2 cup apple cider vinegar
- 1 tablespoon molasses
- 1/4 cup brown sugar
Directions:
- In a blender add in the mango and a splash or two of water.
- Puree until smooth, adding more water if needed to reach a smooth consistency.
- Transfer puree into a medium saucepan.
- To the saucepan, add in the ketchup, chipotle peppers, garlic, vinegar, molasses and brown sugar.
- Bring to a simmer over medium heat and continue to simmer for 5-7 minutes or until the sauce has reduced and thickened a little bit.
- Brush sauce on chicken and cook your desired way.
- Baste the chicken with any remaining sauce while it is cooking.

Notes:
This will make enough sauce for about 4 chicken breasts. You can easily double, triple or even quadruple the recipe.
