Coffee Cake Muffins

The traditional coffee cake gets turned into muffins with a crumb topping.

Coffee Cake Muffins: Savory Sweet and Satisfying

These muffins taste just like a piece of coffee cake but in a convenient muffin form. Plus they have a a lot of crumb topping piled on top. I am not exaggerating when I say a lot, there really is a lot of crumb topping. But that is okay because it is delicious. If you do not want as much crumb topping you can reduce the recipe to not make so much topping.

Coffee Cake Muffins

Ingredients:
Coffee Cake Muffins
  • 1 1/2 cups all purpose flour
  • 1/2 cup light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda
  • 3/4 cup milk
  • 1/3 cup canola oil
  • 2 eggs
Crumb Topping
  • 1/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups all purpose flour
Glaze
  • 1/2 cup confectioners' sugar
  • 2 teaspoons milk
Directions:
  1. Preheat oven to 375º F. Spray a muffin tin with cooking spray and set aside.
Crumb Topping
  1. In a medium bowl combine both sugars and cinnamon. Whisk in the melted butter.
  2. Add in the flour and stir just until fully incorporated.
  3. Spread the mixture out on a piece of parchment paper and set aside to dry up.
Coffee Cake Muffins
  1. In a large bowl combine the flour, sugar, baking powder, cinnamon and baking soda.
  2. In another bowl whisk together the milk, canola oil and eggs. Pour this mixture over the dry ingredients and stir just until everything is incorporated.
  3. Divide the batter evenly between the prepared muffin cups.
  4. Using your hands, break the crumb topping up and sprinkle it evenly on the top of the muffin batter, gently pressing the crumb topping down into the batter.
  5. Bake for 15-17 minutes or until an inserted toothpick comes out clean.
Crumb Topping
  1. In small bowl whisk together the sugar and milk until smooth. If the glaze is too thin add a bit more sugar. If the glaze is too thick add a little bit more milk.
  2. When the muffins are done allow them to cool for 10 minutes and then drizzle the glaze evenly over the top of the muffins. Allow the glaze to set before eating.
