Cheddar Irish Soda Bread

Cheddar Irish Soda Bread: Savory Sweet and Satisfying

I have seen various posts for Irish Soda Bread over the years, but for some reason I never felt the need to check them out. Making this bread was never on my list of recipes to make. Then one day I was trying to decide what to have with a corned beef meal and I thought about this bread and decided to investigate it further.

I am so glad that I did because this bread is absolutely delicious. So delicious that I had a hard time waiting until the next nights dinner to be able to have another piece of it. In fact I actually two pieces of it the night I cooked it, that is just how good it is.

Cheddar Irish Soda Bread

Ingredients:

  • 2 1/2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • unsalted butter, cold cut into 4 slices unsalted butter, cold cut into 4 slices
  • 2 cups shredded sharp cheddar cheese
  • 1 1/4 cups buttermilk
  • 1 egg

Directions:

  1. Preheat oven to 375º F. Spray an 8 inch round cake pan with cooking spray.
  2. In large bowl, whisk together the flour, baking powder, baking soda and salt.
  3. Add the butter to the bowl and cut it in with a pastry cutter or two knives until the mixture resembles large crumbs.
  4. Add in the shredded cheese and gently stir to combine.
  5. Add the buttermilk and egg to the bowl, stirring until everything is just combined.
  6. Pour the batter into prepared pan and spread the dough to evenly cover the pan.
  7. Bake for 40-45 minutes or until an inserted toothpick comes out clean.
  8. Let bread cool for 5 minutes.
  9. Run a knife between the bread and edge of pan to loosen the bread. Remove bread from pan and cool for 20 minutes on a cooling rack before serving.
