Chipotle Cranberry Sweet Potato Salad: Savory Sweet and Satisfying

I was a little nervous when I made this salad. The combination is different and I was worried how it would taste. However once I tasted it I was sold. It is a deliciously unique combination. When you take your first bite you get the tartness of the cranberries, followed by the spiciness of the chipotle peppers.

If spicy stuff is not your thing, you could leave out the chipotle peppers and it would still taste very good. In fact that is how my husband wants me to make it next time. It is not like he did not like the spiciness of it, but he is curious as to how it would taste with just the cranberries.

Chipotle Cranberry Sweet Potato Salad

Ingredients:

  • 2 1/2 pounds sweet potatoes, peeled and cut into 1 inch cubes
  • 3 tablespoons olive oil, divided
  • 1/2 teaspoon ground black pepper
  • 3/4 cup fresh cranberries
  • 1/4 cup water
  • 2 teaspoons honey
  • 1 chipotle pepper, finely diced
  • 1 teaspoon adobo sauce
  • 3/4 cup chopped green onions

Directions:

  1. Preheat oven to 450º F. Line a baking sheet with parchment paper.
  2. Toss the sweet potatoes with 2 tablespoons olive oil and black pepper.
  3. Place on prepared baking sheet in a single layer.
  4. Bake for 20-30 minutes or until tender, stirring after 15 minutes.
  5. In a medium saucepan add the remaining tablespoon of olive oil, water, cranberries, honey, chipotle pepper and adobo sauce.
  6. Bring to a boil over medium low heat.
  7. Cover, reduce the heat to to low and cook for 10 minutes or until the cranberries pop, stir occasionally.
  8. Remove from the heat and mash with a fork.
  9. In a large bowl toss together the roasted sweet potatoes, chipotle cranberry mixture and green onions.
