Berry Oatmeal Greek Yogurt Muffins: Savory Sweet and Satisfying

I love that these muffins are still a muffin, but with some healthiness to them. The oats adds a nice texture and help keep you full until your next meal. The muffins are not as sweet as a "normal" muffin, but they still satisfy my muffin craving and of course taste good.

Berry Oatmeal Greek Yogurt Muffins

Ingredients:

  • 2 cups all purpose flour
  • 1 cup old fashioned oats
  • 2/3 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cups nonfat Greek yogurt
  • 1 1/2 tablespoons honey
  • 2 eggs, lightly beaten
  • 4 tablespoons unsalted butter, melted and cooled slightly
  • 1 teaspoon vanilla extract
  • 1 cup frozen mixed berries

Directions:

  1. Preheat oven to 350º F. Spray a muffin tin with cooking spray or line with liners.
  2. In a large bowl combine the flour, sugar, oats, baking powder and baking soda.
  3. In a medium bowl combine the yogurt, honey, eggs, slightly cooled butter and vanilla until completely mixed.
  4. Add the yogurt mixture to the flour mixture and stir just until combined.
  5. Gently fold in the frozen berries.
  6. Spoon into prepared muffin tin and bake for 20-25 minutes or until top is golden.
