These bars are packed with flavor. The delicious caramel sauce is surrounded by not only a chocolate chip cookie, but a chocolate chip cookie that has peanut butter and toffee in it. Such a delicious bar.
Peanut Butter Caramel Toffee Chocolate Chip Cookie Bars
Ingredients:
Caramel Filling
- 11 ounce bag caramels
 - 14 ounce can sweetened condensed milk
 - 4 tablespoon unsalted butter
 
Cookie Dough
- 12 tablespoons unsalted butter
 - 2 cups light brown sugar
 - 1/2 cup creamy peanut butter
 - 2 eggs, room temperature
 - 1 tablespoon vanilla extract
 - 2 cups all purpose flour
 - 1 cup old fashioned oats
 - 2 1/2 teaspoon baking powder
 - 2 cups chocolate chips
 - 1 cup peanut butter chips
 - 1 cup Heath toffee bits
 
Directions:
Caramel Filling
- Unwrap caramels and place them in a small saucepan.
 - Add in the sweetened condensed milk and butter.
 - Cook over medium low heat, stirring occasionally, until caramels have completely melted and mixture is smooth.
 
Cookie Dough
- Preheat oven to 350º F. Line a 9x13 baking dish with parchment paper.
 - In a large bowl cream together the butter and sugar together.
 - Add in the peanut butter and continue mixing.
 - Add in the eggs one at a time, mixing well after each addition. Add in the vanilla.
 - In a medium bowl combine the flour, oats, and baking powder.
 - Slowly add the dry mixture to the wet ingredients while mixing.
 - Stir in the chocolate chips, peanut butter chips and toffee bits.
 - Spread 2/3 of the dough into the prepared pan.
 - Slowly pour caramel sauce over the top into an even layer.
 - Drop the remaining dough by the teaspoon over the caramel sauce.
 - Bake for 30 minutes.
 - Let cool completely and cut into bars.
