Peanut Butter Caramel Toffee Chocolate Chip Cookie Bars
These bars are packed with flavor. The delicious caramel sauce is surrounded by not only a chocolate chip cookie, but a chocolate chip cookie that has peanut butter and toffee in it. Such a delicious bar.
11 ounce bag caramels
14 ounce can sweetened condensed milk
4 tablespoon unsalted butter
12 tablespoons unsalted butter
2 cups light brown sugar
1/2 cup creamy peanut butter
2 eggs, room temperature
1 tablespoon vanilla extract
2 cups all purpose flour
1 cup old fashioned oats
2 1/2 teaspoon baking powder
2 cups chocolate chips
1 cup peanut butter chips
1 cup Heath toffee bits
Unwrap caramels and place them in a small saucepan. Add in the sweetened condensed milk and butter. Cook over medium low heat, stirring occasionally, until caramels have completely melted and mixture is smooth.
Preheat oven to 350º F. Line a 9x13 baking dish with parchment paper.
In a large bowl cream together the butter and sugar together. Add in the peanut butter and continue mixing. Add in the eggs one at a time, mixing well after each addition. Add in the vanilla.
In a medium bowl combine the flour, oats, and baking powder. Slowly add the dry mixture to the wet ingredients while mixing.
Stir in the chocolate chips, peanut butter chips and toffee bits. Spread 2/3 of the dough into the prepared pan. Slowly pour caramel sauce over the top into an even layer. Drop the remaining dough by the teaspoon over the caramel sauce. Bake for 30 minutes. Let cool completely and cut into bars.
