Stuffed Chocolate Chips Muffins: Savory Sweet and Satisfying

Oh my goodness are these muffins delicious. I actually got sad when they were all gone. I need to make them again and soon.

Stuffed Chocolate Chips Muffins: Savory Sweet and Satisfying

The center of these muffins adds a nice burst of flavor. Kind of like a special treat in the middle of an already delicious and tasty muffin.

Stuffed Chocolate Chips Muffins

Ingredients:

  • 15 teaspoons mocha cappuccino hazelnut spread
  • 3 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoons baking soda
  • 10 tablespoons unsalted butter, room temperature
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup Greek vanilla yogurt
  • 3/4 cup vanilla yogurt
  • 1 cup mini chocolate chips, plus some for sprinkling on top

Cooking Directions:

  1. On a wax paper lined baking sheet, drop 15 rounded teaspoons of mocha cappuccino hazelnut spread, making sure they do not touch.
  2. Place the baking sheet in the freezer for at least 2 hours or until the spread is completely frozen solid.
  3. Preheat oven to 375º F. Line 15 muffins cups with liners and set aside.
  4. In a large bowl whisk together the flour, baking powder and baking soda.
  5. In the bowl of a stand mixer cream together the butter and sugar until light and fluffy, about 2 minutes.
  6. Beat in the eggs one at a time. Beat in the vanilla.
  7. Alternate adding in the flour and both yogurts to the creamed butter mixture.
  8. Gently stir in 1 cup of mini chocolate chips, batter will be very thick.
  9. Evenly fill the prepared muffins cups to the top.
  10. Remove the frozen mocha cappuccino hazelnut spread from the freezer and quickly push one into the center of each muffin. Make sure that it is completely covered with batter.
  11. Sprinkle each muffin with additional mini chocolate chips.
  12. Bake for 15-25 minutes or until the top of the muffins are slightly golden brown. Serve slightly warm.

Notes:
Nutella may be substituted for the mocha cappuccino hazelnut spread or you can just leave it out and have plain chocolate chip muffins.
