These potato puffs are a great way to use up leftover mashed potatoes. Take the leftover mashed potatoes add a few ingredients, bake in a muffin tin and the leftover mashed potatoes are now transformed into a delicious side dish.
However, these Mashed Potato Puffs are so good, that you may just want to make mashed potatoes especially for this recipe.
Mashed Potato Puffs
Ingredients:
- 2 eggs
- 1/3 cup light sour cream
- 1 heaping cup shredded sharp cheddar cheese
- 2 tablespoon grated Parmesan cheese
- 2 tablespoon sliced green onions
- 3 cups mashed potatoes
- black pepper, to taste
Directions:
- Preheat oven to 400º F. Grease a nonstick muffin tin. Set aside.
- In a medium bowl, whisk the eggs, then whisk in the sour cream.
- Stir in both cheeses and green onions.
- Add in the mashed potatoes, season with black pepper and mix well.
- Spoon potatoes into prepared muffin tin filling just to the top or slightly below.
- Bake for 25-35 minutes or until golden brown.
- Remove from the oven and let cool for 5 minutes in pan.
