I really like crock pot dishes like this one. It does not require any precooking and it is very quick and easy to prepare.
Southwestern Chicken
Ingredients:
- 30 ounces frozen corn
- 1- 15 ounce can low sodium black beans, rinsed and drained
- 1- 16 ounce jar chunky salsa, divided
- 6 boneless skinless chicken breasts
- 1 cup shredded cheddar cheese
- rice
- In a greased crockpot combine frozen corn, beans and 1/2 cup salsa.
- Top with chicken and pour remaining salsa over top.
- Cover crock pot and cook on high for 3-4 hours or low for 7-8 hours.
- Sprinkle with cheese, cover and cook for 5 minutes or until cheese melts. Shredded chicken and mix.
- Serve over rice.
