Southwestern Chicken: Savory Sweet and Satisfying


I really like crock pot dishes like this one. It does not require any precooking and it is very quick and easy to prepare.

Southwestern Chicken

Ingredients:
  • 30 ounces frozen corn
  • 1- 15 ounce can low sodium black beans, rinsed and drained
  • 1- 16 ounce jar chunky salsa, divided
  • 6 boneless skinless chicken breasts
  • 1 cup shredded cheddar cheese
For Serving
  • rice
Directions:
  1. In a greased crockpot combine frozen corn, beans and 1/2 cup salsa.
  2. Top with chicken and pour remaining salsa over top.
  3. Cover crock pot and cook on high for 3-4 hours or low for 7-8 hours.
  4. Sprinkle with cheese, cover and cook for 5 minutes or until cheese melts. Shredded chicken and mix.
  5. Serve over rice.
