I really like crock pot dishes like this one. It does not require any precooking and it is very quick and easy to prepare.
30 ounces frozen corn
1- 15 ounce can low sodium black beans, rinsed and drained
1- 16 ounce jar chunky salsa, divided
6 boneless skinless chicken breasts
1 cup shredded cheddar cheese
For Serving (not included in nutritional info):
In a greased crockpot combine frozen corn, beans and 1/2 cup salsa. Top with chicken and pour remaining salsa over top. Cover crock pot and cook on high for 3-4 hours or low for 7-8 hours. Sprinkle with cheese, cover and cook for 5 minutes or until cheese melts. Shredded chicken and mix. Serve over rice.
