My husbands favorite breakfast consists of an egg over medium, tater tots, bacon and sometimes a piece of toast. If weekend breakfast was up to him it would be his favorite every single time. But thankfully it is not up to him and I get to try out many different breakfasts.
My husband enjoys my breakfasts, but none of them have the appeal to him like his favorite. That was until I made this. He said this was just as good as his favorite breakfast, maybe even a little bit better.
frozen tater tots
8 fajita sized tortillas
1 1/2 cups shredded cheddar cheese
2 tablespoon half and half
1 pound breakfast sausage
black pepper, to taste
1 tablespoon unsalted butter
1/2 cup jarred jalapeño slices
3 Roma tomatoes, sliced
Bake the tater tots according to package directions, cooking until nice and crispy.
Warm the tortillas in either the oven or microwave and keep warm.
In a large skillet cook the sausage until it is browned and completely cooked.
Lightly beat together the eggs and half and half and season with black pepper. In a nonstick skillet melt the butter over medium heat. Pour in the eggs and cook until scrambled and no longer wet.
Assemble the burritos by layering the cheese, eggs, sausage, tater tots, jalapeños and tomato slices in the middle 1/3 of the tortilla. Fold both sides of the tortilla over the filling. Serve with salsa if desired.
The more filling you add to the tortillas the harder it will be to keep closed.
