Baked Oatmeal Muffins

Baked Oatmeal Muffins: Savory Sweet and Satisfying

These baked oatmeal muffins are delicious and make a great snack or even a healthy breakfast on the go. What is even better is you can add a variety of topping to them to suit different tastes.

Baked Oatmeal Muffins

Ingredients:

  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups unsweetened applesauce
  • 1/2 cup mashed banana
  • 1/2 cup honey
  • 5 cups old fashioned rolled oats
  • 1 tablespoon ground cinnamon
  • 3 teaspoons baking powder
  • 2 1/4 cups milk

Choice of Toppings (not included in the nutritional info):

  • dried cranberries
  • raisins
  • chocolate chips
  • nuts

Directions:

  1. Preheat oven to 350º F. Spray two muffin tins well with cooking spray or line with cupcake liners.
  2. In a large bowl mix together the eggs, vanilla, applesauce, banana and honey.
  3. Add in the oats, cinnamon and baking powder. Mix well until all the oats are coated and no longer dry.
  4. Add in milk and stir to combine.
  5. Fill muffin cup 3/4 full with oat mixture.
  6. Place toppings on and press down slightly.
  7. Bake for 30 minutes or until and inserted toothpick comes out clean.
  8. Cool for 15 minutes in muffin tins, then remove from tins and cool completely on cooling rack.

Notes:

If you want to make the whole batch with the same topping you can always add it directly into the oat mixture instead of just on top.

You will get anywhere between 18-24 muffins depending on how full you fill the muffin cups and whether you use paper liners, silicone liners or no liners. I used silicone liners, which do not hold as much and got 24 muffins.

The original recipes say you can freeze them in an airtight container or Ziploc bag, then thaw them overnight in the refrigerator. Reheat in microwave for 45-60 seconds. I have not done this so I can not vouch for how well it works.
