Fiesta Dinner

Fiesta Dinner: Savory Sweet and Satisfying

I love easy and flavorful dishes. There are a few steps to this dish, but none of them are complicated and the it come together fairly easily. The chilies add flavor without making it super spicy.

Fiesta Dinner: Savory Sweet and Satisfying

Fiesta Dinner

Ingredients:

  • 1 package taco seasoning
  • 1 pound ground turkey
  • 14.5 ounce can no salt added diced tomatoes
  • 7 ounce can diced chilies
  • 8 ounces shredded Colby cheese
  • 6 tortillas

Directions:

  1. Preheat oven to 350º F.
  2. In a large skillet cook ground turkey until done.
  3. Follow package directions for taco seasoning.
  4. Add in the diced tomatoes, chilies and simmer for 15 minutes.
  5. Place 1 tortilla in a round casserole dish. Layer with 1/6 of the meat mixture and 1/6 of the cheese. Repeat layers ending with cheese.
  6. Bake for 30 minutes.

Notes:
I used my homemade taco seasoning to lower the amount of sodium in this dish.
