I have always loved English muffins. There is something just so delicious about them toasted with a bit of butter or even used in a breakfast sandwich. They are just so darn delicious!
A few months ago I made some English muffins for a breakfast sandwich. They tasted okay, but the recipe was not perfect, not even close. So when I wanted to make this breakfast sandwich and wanted to use English muffin I decided to try an English muffin bread.
It was a good choice. This bread is so very easy to make and tastes delicious! Perfect for a breakfast sandwich. I have not given up on homemade English muffins, I will try them again, but for now this bread is a good alternative.
English Muffin Bread
Ingredients:
- 3 cups all purpose flour
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 tablespoon active dry yeast
- 1 cup milk
- 1/2 cup water
- 2 tablespoons olive oil
- cornmeal
Directions:
- Preheat oven to 400º F. Lightly grease a 8 1/2 x 4 1/2 loaf pan and sprinkle with corn meal.
- In a large bowl combine the flour, sugar, salt, baking soda and yeast.
- In a small saucepan combine the milk, water and oil and heat to 120-130º F, using a thermometer to be accurate.
- Pour the hot liquid into the dry ingredients. Mix for 1-2 minutes or until the dough is soft and no dry ingredients remain.
- Transfer the dough to the prepared pan and level it off.
- Cover the pan with a clean kitchen towel and allow to rise for about 1 hour or until the dough is about 1/4 inch above the rim of the pan.
- Bake for 20-25 minutes or until the bread is golden brown.
- Allow the bread to sit in pan for 5 minutes, then remove from the pan and allow to cool on a cooling rack.
