Tomato Basil Alphabet Soup with Mini Turkey Meatballs: Savory Sweet and Satisfying

This soup was a huge hit with my family. My girls loved the alphabet letters in their soup and they even found some numbers. My husband and I enjoyed the overall taste and flavor of this soup.

Tomato Basil Alphabet Soup with Mini Turkey Meatballs

Ingredients:
  • 3 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2- 28 ounce cans whole peeled tomaotes
  • 6 cups low sodium chicken broth
  • black pepper, to taste
  • 1 tablespoon granulated sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 slice sandwich bread
  • 3 tablespoons milk
  • 1 pound ground turkey
  • 1 egg, lightly beaten
  • 1 tablespoon garlic powder
  • 1 cup alphabet pasta, uncooked
Directions:
  1. In a large pot heat olive oil over medium heat. Add in onions and sauté for 4-5 minutes or until tender.
  2. Stir in garlic and cook for an additional minute.
  3. Add in tomatoes, chicken broth, black pepper, sugar, thyme and basil. Bring to a boil, cover, reduce heat to low and simmer.
  4. While soup is simmering prepare meatballs.
  5. Break bread into bite sized pieces and add to a large bowl.
  6. Add in milk, stir to mix and let sit for 2 minutes.
  7. Add in ground turkey, egg and garlic powder. Combine just until mixed and roll into small bite sized pieces. Place meatballs on a large cookie sheet until needed.
  8. Cook pasta according to package directions and drain. You want the pasta to be done at the same time the meatballs are done.
  9. Use an immersion blender to puree the soup until completely smooth.
  10. Return to a simmer and drop in meatballs. Give the soup a quick stir and let simmer for 5 minutes to cook the meatballs.
  11. Add in cooked alphabet pasta, stir and serve.

Notes:
If you do not have an immersion blender you can transfer the soup, in batches, to a blender to puree and then return to pot and bring back to a simmer.
