Smoked Sausage Potato Bake: Savory Sweet and Satisfying

This is what I call a comfort dish. Creamy mashed potatoes with cheese and sausage. Truly a delicious dish.

Smoked Sausage Potato Bake: Savory Sweet and Satisfying

The ingredients and directions for this dish include making the mashed potatoes. However you can always use leftover mashed potatoes. You will need 4 cups of mashed potatoes and will following the directions starting with adding the sour cream and cheese to the mashed potatoes.

Smoked Sausage Potato Bake

Ingredients:

  • 6 medium russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 3 tablespoons unsalted butter, divided
  • 1 cup light sour cream
  • 1 cup shredded cheddar cheese
  • 14 ounces smoked turkey sausage
  • 1 cup monterey jack cheese
  • 2 tablespoons dry breadcrumbs

Directions:

  1. Preheat oven to 350º F. Spray a 2 quart baking dish with cooking spray and set aside.
  2. In a medium pot add potatoes and cover with cold water.
  3. Bring potatoes and water to a boil and boil for 15-20 minutes or until potatoes can easily be pierced with a knife.
  4. Drain potatoes and return to pot.
  5. Add in milk and 3 tablespoons butter and mash until smooth. Stir in sour cream and cheddar cheese.
  6. Spread half of the mashed potatoes into prepared baking dish.
  7. Top with sausage and spread remaining potatoes on top. Sprinkle with monterey jack cheese.
  8. Melt remaining tablespoon of butter and mix with bread crumbs.
  9. Sprinkle on top of casserole and bake for 30-35 minutes or until heated through and edges are golden brown.
