Mexican Stuffed Shells


Stuffed shells with a Mexican flavor. These shells are not overly spicy, just flavorful. Now the amount of spiciness will somewhat depend on how spicy the picante sauce is. Want more spiciness try substituting 1 can of green chilies for 1 can of jalapeños.

Mexican Stuffed Shells

Ingredients:

  • 1 box jumbo shells
  • 1 1/2 pounds ground turkey
  • 18 ounce jar picante sauce
  • 3/4 cup water
  • 12 ounces no salt added tomato sauce
  • 2-4 ounce cans chopped green chilies
  • 1 1/2 cups shredded monterey jack cheese
  • 2 cups french fried onions

Directions:

  1. Preheat oven to 350º F.
  2. Cook pasta according to package directions and drain.
  3. In a large skillet brown ground turkey and drain.
  4. Meanwhile in a medium bowl combine picante sauce, water and tomato sauce.
  5. Stir 3/4 cup sauce, 3/4 cup cheese, chilies and 1 cup french fried onions into the cooked ground turkey.
  6. Spread half of the remaining sauce into the bottom of a 9x13 baking dish.
  7. Stuff shells with turkey mixture and place into baking dish. Top shells with remaining sauce and bake covered for 30 minutes.
  8. Remove from oven and top with remaining 1 cup of french fried onions and 3/4 cup cheese. Return to oven and bake uncovered for 5 minutes or until cheese is melted.
