When I first discovered this dip on Pinterest, I looked at it, but did not pin it. Then I came across it again and thought more about it and decided to pin it. Not long after that I decided to make it, but was still unsure about a dip made with cauliflower. Now it did have plenty of cream cheese, plus the buffalo sauce, but a dip made with cauliflower.
Well after trying it I have to say I am glad I made it. It is really good and nobody would ever know it was made with cauliflower unless you told them. It is just a creamy and spicy dip.
While I was shopping for this dip I discovered this orange cauliflower. I never knew such a thing existed. It tasted the same as "regular" white cauliflower and it happened to be cheaper. It was fun to try a new color of cauliflower.
Buffalo Cauliflower Dip
Ingredients:
- 2 1/2 cups coarsely grated cauliflower florets
- 3/4 cup Frank's original hot sauce
- 2- 8 ounce packages reduced fat cream cheese
- 6 ounces plain fat free Greek yogurt
- 1/4 teaspoon dried parsley flakes
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dill weed
- 1/8 teaspoon onion powder
For Serving (not included in the nutritional info)
- tortilla chips
Directions:
- Place grated cauliflower and hot sauce into a medium pot or large skillet. Cook over medium heat until heated through.
- Add in cream cheese and stir until melted.
- Add in Greek yogurt, parsley, garlic powder, dill, and onion powder. Stir and cook until heated through.
- Serve with tortilla chips.
