This dish is so very very good. I served it for my family and my parents and everyone came back for seconds. I always know a dish is really good when someone comes back for more.
Creamy Bow Tie Pasta with Chicken and Broccoli
Ingredients:
- 12 ounces bow tie pasta
- 16 ounces frozen broccoli florets
- 1/4 cup roasted red pepper Italian Parmesan dressing
- 4 boneless skinless chicken breasts
- 3 cloves garlic
- 3 cups spaghetti sauce
- 6 ounces reduced fat cream cheese
- 1/3 cup grated parmesan cheese
Directions:
- Cook pasta according to directions on package, adding broccoli to the pasta for the last 3 minutes of the cooking time.
- Meanwhile, heat the dressing in large nonstick skillet on medium heat. Add chicken and garlic and cook for 5 minutes. Turn chicken over and continue cooking for 4 to 5 minutes or until chicken is cooked through.
- Drain the pasta and broccoli and set aside.
- Add spaghetti sauce and cream cheese to the chicken in the skillet.
- Cook on medium-low heat for 2 to 3 minutes or until cream cheese is completely melted, mixture is well blended and chicken is coated with sauce, stirring occasionally. Remove chicken from skillet and keep warm.
- Add the pasta and broccoli mixture to sauce mixture and mix well.
- Transfer the pasta to a serving plate.
- Cut chicken crosswise into thick slices; fan out chicken over pasta mixture.
- Sprinkle evenly with Parmesan cheese.
