If you like banana bread then you will love these muffins. They taste just like banana bread, but in a convenient muffin. The sweet caramel icing takes these muffins to the next level making them oh so delicious.
Caramel Banana Muffins
Ingredients:
- 1/4 cup vegetable shortening
- 1 cup granulated sugar
- 1 egg
- 1 1/2 cups mashed bananas (about 3 large)
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 2 tablespoons unsalted butter
- 1/4 cup light brown sugar, packed
- 1 tablespoon milk
- 1/2 cup confectioners' sugar
Directions:
- Preheat oven to 350º F. Spray a muffin tin with cooking spray.
- In a large bowl cream together the shortening and sugar until light and fluffy.
- Beat in the egg until combined.
- Beat in the mashed bananas and vanilla.
- In another large bowl combine the flour and baking soda.
- Slowly mix the flour mixture into the creamed mixture until just combined.
- Fill muffin tin 3/4 full with batter.
- Bake for 18-25 minutes or until an inserted toothpick comes out clean.
- Cool for five minutes in muffin tin. Transfer muffins to a wire rack to cool completely.
- While the muffins are cooing make icing by melting butter in a small saucepan over medium heat.
- Stir in the brown sugar and milk. Bring mixture to a boil stirring constantly.
- Once the mixture reaches a boil remove from heat and cool slightly.
- Mix in confectioners' sugar until smooth.
- Spread caramel icing over the cooled muffins.
