These potatoes have a nice sweetness to them from the honey, but not too sweet. May seem like a strange combination, but it is very tasty and a nice change of pace when it comes to potatoes.
Honey Roasted Red Potatoes
Ingredients:
- 3 pounds red potatoes
- 4 tablespoons unsalted butter, melted
- 6 tablespoons honey
- 3 teaspoons ground mustard
- 3/4 teaspoon black pepper
Directions:
- Preheat oven to 375º F.
- Rinse potatoes and pat dry. Cut potatoes into quarters and place them on a baking sheet.
- In a small bowl mix together the butter, honey, ground mustard and black pepper. Drizzle over potatoes and toss to coat well.
- Bake for 30-40 minutes or until tender.
