Bruschetta Chicken: Bruschetta Chicken

It is amazing how a little amount of salad dressing can add so much flavor to chicken.

This chicken comes together fairly easily, but is so yummy and flavorful. As for cooking the chicken, you can do it in a skillet or on a grill, whatever you feel like.

Bruschetta Chicken

Ingredients:

  • 1/4 cup sun dried tomato dressing, divided
  • 4 small boneless skinless chicken breasts
  • 1 roma tomato, finely chopped
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon dried basil

Directions:

  1. In a resealable bag combine the chicken and 2 tablespoons dressing, turning several times to coat. Refrigerate for 10 minutes to marinate.
  2. Remove the chicken and cook your desired way, until almost completely cooked.
  3. While chicken is cooking combine the tomatoes, cheese, basil and remaining 2 tablespoons dressing.
  4. Place tomato mixture on the almost cooked chicken and cover cooking until cheese is melted and chicken is completely cooked.
