Spinach Pasta Salad
This salad is so yummy. My husband and I could not get enough of it, in fact we even ate by itself for lunch. I also think my husband took it to work for dinner one night when he had to work late.
Whether you eat for lunch or dinner as a side or main dish it will be delicious!
Spinach Bow Tie Pasta Salad
1 -16 ounce package bow tie pasta
6 ounces craisins
3- 11 ounce cans mandarin oranges, drained
1/2 cup fresh parsley, chopped
1 bunch green onions, chopped
6 ounces honey roasted peanuts, roughly chopped
1- 10 ounce bag spinach, roughly chopped
1 cup canola oil
2/3 cup teriyaki sauce
2/3 cup white wine vinegar
6 tablespoons granulated sugar
1/2 teaspoon black pepper
Cook pasta according to package directions. Drain and rinse with cold water.
In a small bowl whisk together all of the ingredients for the dressing.
Add drained pasta to a large bowl and pour dressing over top, mixing to combine. Refrigerate for 2 hours.
Remove from refrigerator and stir. Add in craisins, mandarin oranges, parsley, green onions, honey roasted peanuts and spinach, stir to combine. Serve immediately.
