I have to say this is the perfect strawberry ice cream. It is creamy, made with fresh strawberries and not only does this ice cream have great strawberry flavor, but it also has some chunks of strawberry.
Strawberry Ice Cream
Ingredients:
- 2 cups finely diced strawberries
- 1/3 cup granulated sugar
- 2 1/2 tablespoons fresh squeezed lemon juice
- 1 cup half and half
- 1 3/4 cups heavy cream
- 2/3 cups granulated sugar
- 1 teaspoon vanilla extract
Directions:
- Place strawberries in a medium bowl and add 1/3 cup granulated sugar and lemon juice. Stir to combine and refrigerate for 2 hours.
- Place freezer safe container for storing the ice cream in the freezer.
- After 2 hours drain the strawberries saving the juice.
- Remove half of the strawberries and place in a medium bowl and mash.
- In a large bowl whisk together the half and half, heavy cream and 2/3 cup granulated sugar until sugar is dissolved.
- Add in vanilla extract, mashed strawberries, and saved strawberry juice. Whisk to combine.
- Pour the mixture into your ice cream machine and churn according to manufacturer's directions.
- During the last 5 minutes of churning time add remaining diced strawberries.
- Take storage container out of the freezer and transfer ice cream into it. Cover and freeze.
