Key Lime Cheesecake Pancakes

I am going to start off with a big disclaimer here. These pancakes are not an everyday or even once a month type of pancake. They are special occasion type of pancake that are so good it is like having dessert for breakfast.

With that being said these pancakes are totally worth the extra calories and fat to have on a special occasion.

Key Lime Cheesecake Pancakes

3 cups all purpose flour
1/4 cup + 2 tablespoons granulated sugar
4 teaspoons baking soda
2 sticks unsalted butter, melted
4 eggs, room temperature
2 teaspoons vanilla extract
2  cups buttermilk
1/2 cup key lime juice

Cheesecake Topping
8 ounces reduced fat cream cheese
4 tablespoons butter
1 1/3 cup heavy whipping cream
1 teaspoon vanilla extract
1/4 cup granulated sugar


In a medium bowl whisk together the flour, sugar and baking soda.

In a large bowl whisk together the melted butter, eggs, vanilla extract, buttermilk and key lime juice. Whisk in the dry ingredients and let stand for 10 minutes.

Using a 1/4 cup measuring cup, scoop out the pancake batter and place on a preheated griddle sprayed with cooking spray. Cook for 1-3 minutes on each side, or until done.

Cheesecake Topping
In a small saucepan add in cream cheese and butter. Melt over medium heat, stirring to combine. Slowly stir in the heavy cream. Add in vanilla and sugar. Keep stirring until smooth and mixture comes just to a boil. Remove from heat and serve over pancakes.
