The cookbook that this recipe came from had this to say about the name of the chicken, "The word "California" is often used to describe recipes that are light and healthy.". I never really knew that, but this chicken is pretty healthy and light.
Besdies being light and healthy, this chicken is simple and flavorful with a splash of lemon flavor. Perfect for a summer meal.
2 tablespoon fresh lemon juice
1 tablespoons olive oil
1 tablespoon water
2 teaspoons garlic pepper
1/2 teaspoon dried basil
1/2 teaspoon onion powder
4 boneless skinless chicken breasts
In a small bowl, combine the lemon juice, oil, water, garlic pepper, basil and onion powder. Brush mixture on both sides of the chicken breasts. Cook chicken in a preheated nonstick skillet until browned and completely cooked.
This chicken can also be cooked on a grill.
