Sausage Skillet Scramble: Savory Sweet and Satisfying

I enjoy cooking a special breakfast for my family on the weekends, however with our busy lives time is always an issue. So when I find a recipe that does not take a lot of time, and does not require a lot of ingredients I am happy.

This recipe fits those criteria, plus it is cooked all in on skillet which makes clean up easy and lets not forget is happens to be delicious and filling.

Sausage Skillet Scramble

Ingredients:

  • 6 eggs
  • 1/3 cup milk
  • 12 ounces spicy hot sausage
  • 1 1/2 cups frozen cubed O'Brien hash brown potatoes, thawed
  • 1 tablespoon unsalted butter
  • 1 cup shredded cheddar cheese

Directions:

  1. In a large bowl whisk together the eggs ad milk. Set aside.
  2. In a large non stick skillet, over medium heat, cook the sausage until cooked through. Remove the sausage from the skillet and drain.
  3. In the same skillet cook the potatoes for 5-7 minutes or until tender. Remove from skillet.
  4. Add the butter to the skillet and melt.
  5. Add in the egg mixture stirring and cooking until almost set.
  6. Mix in the sausage and potatoes. Sprinkle with the cheese. Cover and cook for 1-2 minutes or until cheese is melted.
