Sausage and Egg Casserole: Savory Sweet and Satisfying

This casserole is a great breakfast dish. It has eggs, sausage, cheese, a little spice from green chilies and some mushrooms. A delicious and slightly spicy way to start the day.

Sausage and Egg Casserole

Ingredients:

  • 6 eggs
  • 1/4 cup plain Greek yogurt
  • 12 ounce roll breakfast sausage
  • 4 ounces fresh mushroom, sliced
  • 4 ounce can diced green chilies
  • 8 ounces shredded mozzarella cheese

Directions:

  1. Preheat oven to 400º F. Spray a 9x13 baking dish with cooking spray.
  2. In a medium bowl combine the eggs and Greek yogurt. Pour into prepared dish ad bake for 8-10 minutes or until the eggs are just set (not too firm).
  3. While the eggs are cooking, cook the sausage in a skillet over medium heat. Drain off any fat.
  4. Add in the mushrooms and green chilies. Cook until mushrooms are tender about 2-3 minutes.
  5. Spoon sausage mixture over eggs. Sprinkle with cheese.
  6. Bake for 10-15 minutes or until cheese is melted and dish is warmed through.
