Southwest Egg and Tater Tot Casserole


This casserole is delicious and easy to make. But then again anything with tater tots and cheese is delicious right?


Southwest Egg and Tater Tot Casserole
Ingredients:
2 tablespoons unsalted butter
1 small onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
12 large eggs
black pepper
1 1/2 cups shredded reduced fat cheddar cheese
30 ounce bag tater tots

Directions:
Preheat oven to 350ยบ F. Spray a 9x13 baking dish with cooking spray. Set aside.

In a large skillet, over medium heat, melt the butter. Saute the onions and peppers for 5-7 minutes or until soft.

In a large bowl whisk the eggs to break up the yolks. Season with black pepper. Add in the cooked veggies and 1 cup cheese, stir to combine. Pour into prepared baking dish.

Place tater tots into the egg mixture and sprinkle with remaining cheese. Bake for 30-35 minutes or until the cheese is melted and eggs are completely cooked.
