This casserole is delicious and easy to make. But then again anything with tater tots and cheese is delicious right?
Southwest Egg and Tater Tot Casserole
Ingredients:
- 2 tablespoons unsalted butter
- 1 small onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 12 eggs
- black pepper, to taste
- 1 1/2 cups shredded reduced fat cheddar cheese
- 30 ounce bag tater tots
Directions:
- Preheat oven to 350º F. Spray a 9x13 baking dish with cooking spray. Set aside.
- In a large skillet, over medium heat, melt the butter. Sauté the onions and peppers for 5-7 minutes or until soft.
- In a large bowl whisk the eggs to break up the yolks. Season with black pepper.
- Add in the cooked veggies and 1 cup cheese, stir to combine. Pour into prepared baking dish.
- Place tater tots into the egg mixture and sprinkle with remaining cheese.
- Bake for 30-35 minutes or until the cheese is melted and eggs are completely cooked.
