Savory Sweet and Satisfying: Jalapeño Stuffed Chicken

I have a not so good habit, according to my eye doctor. I touch my eyes all the time. I wear contacts and am constantly rubbing my eyes or touch them them for some other reason. I do not see this as a bad habit, like my eye doctor does, except when I have chopped a jalapeño.

After chopping a jalapeño I always make sure to wash my hands well. However, it never gets completely rid of the jalapeño spice and of course since I am always touching my eyes I end up with burning stinging eyes. I have even gone as far as to repeat to myself "do not touch your eyes" over and over again, but it never fails. I touch my eyes after chopping a jalapeño and then have to endure burning and stinging for who knows how long.

This chicken is completely worth the burning stinging eyes. That is just how good this chicken is and if you have been following me, you know I can not pass up a dish inspired by a jalapeño popper.

Jalapeño Popper Stuffed Chicken
Ingredients:
1- 8 ounce package reduced fat cream cheese, softened
1/2 cup cheddar cheese, shredded
2 jalapeño peppers, seeded and finely diced
4 strips turkey bacon, cooked and crumbled
5 boneless skinless chicken breasts
1 cup seasoned bread crumbs

Directions:
Preheat oven to 375º F. Place a baking rack on a baking sheet and spray with cooking spray.

In a medium bowl combine the cream cheese, cheddar cheese, bacon and jalapeños.

Put bread crumbs in a shallow bowl.

Butterfly the chicken breasts by slicing them in half horizontally through the center, stopping just before cutting completely through. Open the chicken breasts and lay flat. Spread a 1/4 of the cheese mixture on each chicken breast. Close each chicken and secure with toothpicks.

Coat each side of the chicken breast in bread crumbs pressing firmly to help the bread crumbs stick. Place chicken on prepared baking rack. Bake for 40 minutes or until the chicken is completely cooked.

  1. I use gloves whenever I am cutting hot peppers....jalapenos, chilis, cayenne, habeneros.
