Chili Casserole

Chili Casserole: Savory Sweet and Satisfying

This dish makes a great lunch. You take a basic can of chili and add some yummy ingredients to it and then bake it in the oven. So delicious.

I think the next time I make I think I will play around with some other flavors of chips. Knowing me I will probably pick a spicy one.

Chili Casserole

Ingredients:

  • 40 ounce can low sodium chili
  • 4 ounce can green chilies
  • 2 1/4 ounce can sliced black olives
  • 2 cups cheddar cheese, shredded
  • 2 cups ranch flavored tortilla chips, crushed

Directions:

  1. Preheat oven to 350º F. Spray a 2 1/2 quart baking dish with cooking spray.
  2. In a large bowl combine the chili, green chilies, black olives and cheese.
  3. Add in the crushed chips and stir just until mixed.
  4. Transfer to prepared baking dish. bake uncovered for 30-35 minutes or until bubbly.
