Almond Crusted Chicken Strips


These chicken strips are a unique twist to the traditional chicken strip. Using ground almonds gives them a different taste, but a good different taste. And let's not forget that they are baked not fried.

Almond Crusted Chicken Strips

Ingredients:

  • 1/2 cup almonds
  • 1/4 cup whole wheat flour
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dry mustard
  • 1/8 teaspoon black pepper
  • 1 1/2 teaspoons olive oil
  • 4 egg whites
  • 1 pound boneless skinless chicken breasts
  • cooking spray

Directions:

  1. Preheat oven to 475º F. Place a wire rack onto a baking sheet and coat it with cooking spray.
  2. Cut chicken breasts into strip size pieces. Set aside.
  3. Place almonds, flour, paprika, garlic powder, dry mustard and black pepper in a food processor and process until the almonds are finely chopped and mixed well with other ingredients.
  4. With the food processor on slowly drizzle in the olive oil and process until well combined. Transfer mixture to a shallow dish.
  5. In another shallow dish whisk all of the egg whites.
  6. Coat each chicken strip in the egg whites and then coat with the almond mixture.
  7. Place the coated chicken strips on the prepared rack. Spray with a bit of cooking spray, turn over and spray the other side.
  8. Bake for 20-25 minutes or until the chicken is cooked through and golden brown.
