Creamy Tomato Tortellini Soup


Oh my this soup is delicious. I really wish I had another bowl of it right now. That is the only downside of this soup, no leftovers. Unless you have less than 4 people in you family then you will be able to enjoy another bowl deliciousness. Mmmm, so good!

Creamy Tomato Tortellini Soup

Ingredients:

  • 2 large garlic cloves, minced
  • 2 tablespoons olive oil
  • 2- 10 3/4 ounce can condensed tomato soup
  • 1/4 cup sun dried tomatoes, chopped
  • 2 cups half and half
  • 2 cups low sodium vegetable broth
  • 1 teaspoon onion powder
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 9 ounce package refrigerated cheese filled tortellini
  • 1/2 cup Parmesan cheese, shredded

Directions:

  1. In a medium pot, over medium heat, heat olive oil. Add garlic and saute until golden brown.
  2. Add in tomato soup, sun dried tomatoes, half and half, vegetable broth, onion powder, Italian seasoning and black pepper.
  3. Bring to a simmer.
  4. Add in tortellini and cook according to the package directions.
  5. Serve and top with Parmesan cheese.
