Cranberry Swiss Chicken


I love quick and easy meals. Especially when I do not have to precook anything and I can place everything in a baking dish and throw it in the oven. What is even better is when one of these meals also happens to be very delicious. This meal is all of the above; fast and easy to prepare plus delicious.


The original recipe calls for white wine, but I don't ever have white wine on hand so I used chicken broth instead. Feel free use what ever you have on hand.

Cranberry Swiss Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup Swiss cheese, shredded
  • 1 can low sodium cream of chicken soup
  • 1/4 cup low sodium chicken broth
  • 1 cup seasoned stuffing cubes
  • 1/3 cup dried cranberries
  • 1/4 cup butter, melted

Directions:

  1. Preheat oven to 350º F. Spray a 9x13 baking dish with cooking spray.
  2. Place chicken breasts in prepared baking dish and sprinkle cheese over the top of them.
  3. Stir together the chicken soup and chicken broth; pour over chicken.
  4. Sprinkle stuffing cubes and cranberries over the top of the chicken and cheese; drizzle the butter over the top of the entire dish.
  5. Bake, covered, for 25 minutes.
  6. Uncover and bake for an additional 20 minutes or until the chicken is completely cooked.

*This dish can easily be doubled to feed more people.
