This ravioli is not only super easy to make, but it takes common ingredients. What could be better than that? Oh I know, it tastes wonderful!
This ravioli has a nice chipotle flavor to it without being too spicy. My kids not only ate it, but said it was "very good". My youngest actual picked this dish out for her special birthday dinner.
Chipotle Ravioli Bake
Ingredients:
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, chopped
- 2 teaspoons adobo sauce (use the sauce from the can the peppers came in)
- 14.5 ounce can no salt added diced tomatoes, drained
- 1 tablespoon juice from canned tomatoes
- 25 ounce bag frozen cheese filled ravioli
- 1 cup pasta water
- 1 egg
- 2 tablespoons all purpose flour
- 1 tablespoon whipping cream
- 1 cup mozzarella cheese, shredded
- Preheat oven 350° F. Grease a 1 1/2 quart baking dish and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the garlic and sauté for about 30 seconds.
- Add in the chipotle peppers, adobo sauce, tomatoes and tomato juice. Simmer for a few minutes.
- In a large pot cook the ravioli according to the package directions. Drain, reserving 1 cup pasta water, and return the ravioli to the pot.
- In a small bowl whisk the egg with a small amount of the pasta water until combined. Add a bit more pasta water to the egg and whisk. Combine the remaining pasta water and the egg, whisking to combine.
- Add the egg mixture to the chipotle tomato sauce.
- Sprinkle the flour on top of the mixture and mix well.
- Simmer until the sauce is thick and creamy, about 1-2 minutes.
- Pour the sauce over the ravioli and gently combine. Place in prepared baking dish.
- Sprinkle with mozzarella cheese and bake for 10-15 minutes or until the cheese is melted.
