Cranberry Orange Bread

Cranberry Orange Bread: Savory Sweet and Satisfying

This bread is slightly dense and not overly sweet. But it is moist and full of tart cranberry flavor, with a hint of orange. A nice change from the light and sweet breads.


Cranberry Orange Bread

Ingredients:
  • 2 cups all purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 orange, zested
  • 2/3 cup fresh orange juice
  • 2 eggs, lightly beaten
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 1 1/2 cups fresh cranberries
Directions:
  1. Preheat oven to 350º F. Grease a 9x5 loaf pan well and set aside.
  2. In a large bowl sift together the flour, sugar, baking powder. Stir in the orange rind.
  3. Make a well in the center of the dry ingredients and add in the eggs and melted butter.
  4. Stir just until the ingredients are blended. Fold in the cranberries.
  5. Transfer the batter to the prepared pan and bake for 45-50 minutes or until an inserted toothpick comes out clean.
  6. Let the bread cool in the pan for 10 minutes and then transfer to a cooling rack to cool completely.
