Lime Coconut Chicken with Coconut Rice

This chicken could not be any easier to prepare. Make a marinade and marinade the chicken for several hours. Make some delicious coconut rice. Cook chicken. Cook sauce and serve it all together.


Even though this recipe is easy, it is super delicious. The chicken is incredibly flavorful not to mention the delicious coconut rice all topped with a yummy sauce.


If you have concerns about cooking and using the marinade as sauce, you can make a second batch of marinade to use instead, cooking the same way.

Lime Coconut Chicken with Coconut Rice

Ingredients:

Chicken

  • 2 pounds boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 1 lime, zest and juice
  • 1 teaspoon ground cumin
  • 1 1/2 teaspoon ground coriander
  • 2 teaspoons curry powder
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons granulated sugar
  • 2 tablespoons low sodium soy sauce
  • 1/2 cup canned coconut milk
  • 1 Serrano, minced

Coconut Rice

  • 1 cup brown rice
  • 1 cup canned coconut milk
  • 1 cup water

Directions:

  1. Place chicken in a resealable bag.
  2. Combine remaining ingredients and mix well.
  3. Pour over chicken in bag, seal bag and turn to coat the chicken.
  4. Refrigerate for at least 2 hours and up to 8 hours.
  5. To make coconut rice, combine rice, coconut milk and water in a medium saucepan and bring to a boil.
  6. Once boiling cover with lid and reduce heat to low and simmer for 45 minutes or until liquid is absorbed and rice is tender.
  7. When ready remove chicken from bag and cook in a skillet until completely cooked.
  8. Pour marinade into a small saucepan and bring to a boil and boil for 2 minutes, stirring constantly.
  9. Serve chicken over coconut rice and top with sauce.
