Cracker Barrel Lima Beans

Cracker Barrel Lima Beans

Growing up I was forced, required to eat lima beans because my parents liked them so much. Fast forward many many years and my wonderful parents introduced my oldest daughter to lima beans and guess what she loved them, thanks mom and dad!!!

Since I love my daughter so much (at the time my youngest was not born yet) I made lima beans several times and I discovered a few things: one, taste buds do change over time and foods you once hated, disliked you may actual grow to like and two, cooked properly lima beans are not so bad. Who would of thought?! Definitely not me, that's for sure!

After getting a new cook book that has knock off recipes, I found this one for Cracker Barrel Lima Beans and decided to give it a try. I can not tell you if these taste at all like the ones Cracker Barrel makes, since I have never eaten their lima beans(too many other good things to eat). However, I can say this is a tasty way to enjoy lima beans.

Cracker Barrel Lima Beans

Directions:

  1. Bring the water and bouillon cube to a boil over high heat.
  2. Add the bacon, red pepper, garlic, and frozen lima beans. Reduce the heat to medium low and let the beans simmer for at least 25 minutes.
  3. Drain the remaining liquid and discard the bacon and garlic clove, before serving.
