I'm going to start off by letting you know that this dish is not healthy by any means. However, we all need a dish like this every once in a while. With that being said, this casserole is creamy and oh so good. I prefer the Spicy Nacho Doritos in this dish, but you could use regular Nacho Doritos, or any other flavor for that matter.
Mexican Dorito Casserole
Ingredients:
- 2 boneless skinless chicken breasts, cooked and shredded
- 1 cup sharp cheddar cheese, shredded
- 1 can low sodium cream of chicken soup
- 1/2 cup fat free milk
- 1/2 cup light sour cream
- 1 can Ro-tel tomatoes
- 1/2 pack taco seasoning
- 1 bag Spicy Nacho Doritos, crushed
- 1/3 cup pepper jack cheese, shredded
Directions:
- Preheat oven to 350°F. Grease a 2 1/2 quart baking dish.
- Combine the chicken, cheddar cheese, cream of chicken soup, milk, sour cream, tomatoes, and taco seasoning.
- Place 1 1/2 cups crushed Doritos in the prepared baking dish.
- Top with about 2 1/2 cups of the chicken mixture.
- Place 1 1/2 cups crushed Doritos on top of chicken mixture and pour remaining chicken mixture on top.
- Top with pepper jack cheese, cover and bake for 30-35 minutes or until hot and bubbly.
- Top each serving with additional crushed Doritos.
