Smothered Creamy Green Chile Bacon Chicken

 This recipe was easy to make and even better it tasted super delicious. The chicken was nice and moist not to mention flavorful. The sauce was just as flavorful as the chicken, and had a wonderful creaminess to it. I am certain I will be making this again and again.

Smothered Creamy Green Chile Bacon Chicken

Smothered Creamy Green Chile Bacon Chicken

Ingredients:

Chicken

  • 6 boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 4 ounce can diced jalapenos, drained
  • 1/2 cup turkey bacon, cooked and crumbled

Sauce

  • 1/4 cup unsalted butter
  • 1/4 cup all purpose flour
  • 2 cups half and half
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 ounce can green chilies, drained
  • 1 1/2 cups colby jack cheese, shredded
  • 1/4 cup turkey bacon, cooked and crumbled

For Serving (not included in the nutritional info)

  • rice, quinoa or noodles

Directions:

Chicken

  1. Preheat oven to 350°F.
  2. In a small bowl, combine cream cheese, bacon, jalapeƱos. Stir well to combine.
  3. Carefully slice chicken to make a pocket for the filling. Cut it in half, like you are butterflying it, but do not cut all the way though.
  4. Divide the filling evenly between the six chicken breasts and stuff each chicken breast with the filling and place into a 9x13 baking dish.
  5. Cover the baking dish with foil and bake for 50 minutes or until the chicken is completely cooked.

Sauce

  1. Melt the butter in a medium saucepan over medium low heat.
  2. Add in the flour stirring for 1-2 minutes.
  3. Very slowly add half and half, stirring constantly, until all half and half has been added. Continue stirring until you reach your desired consistency.
  4. Remove from heat and add garlic powder, onion powder and green chilies. Stir until completely incorporated and set aside.
  5. After the chicken is done, drain any liquid from the baking dish.
  6. Cover the chicken with sauce and sprinkle with cheese and bacon.
  7. Place the baking dish back into the oven for 5 more minutes or until the cheese is melted.
  8. Serve over rice, quinoa or noodles.
