Parmesan Crusted Chicken in Cream Sauce

The sauce is what really makes this dish. Now don't get me wrong, the chicken is good, but there is nothing special about it, it is your standard breaded chicken. But the sauce, oh the sauce, it is so so good.

This recipe makes enough sauce to cover the chicken nicely, but not the rice. If you want enough sauce to cover the rice as well then I would recommend doubling the sauce ingredients (1 cup chicken broth and 2/3 cups cream cheese). Next time I make this I will definitely be doubling the sauce ingredients, so I can enjoy it on the rice as well as the chicken.

Parmesan Crusted Chicken in Cream Sauce

Ingredients:

  • 2 cup brown rice, uncooked
  • 4 1/2 cups low sodium chicken broth, divided
  • 1/3 cups bread crumbs
  • 2 tablespoons Parmesan cheese, grated
  • 4 boneless skinless chicken breasts
  • 4 teaspoons olive oil, divided
  • 1/3 cup chive and onion cream cheese spread

Directions:

  1. Add 4 cups chicken broth to a medium saucepan and bring to a boil.
  2. Stir in the rice, reduce heat to low and simmer for about 45 minutes, or until all of the liquid is absorbed and rice is tender and fluffy.
  3. Let sit for 5 minutes before serving.
  4. Mix bread crumbs and Parmesan cheese in a shallow bowl.
  5. Rinse chicken with cold water and shake of excess water.
  6. Dip chicken into bread crumb mixture, turning to coat both sides. Do this process for all four chicken breasts. (You may need more bread crumbs depending on the size of you chicken breasts.)
  7. Heat 2 teaspoons olive oil in a skillet over medium heat.
  8. Add two chicken breasts and cook for 5-6 minutes on each side, or until chicken is done and golden brown on both sides. Repeat with remaining olive oil and chicken breasts. Set aside.
  9. Add remaining 1/2 cup chicken broth and cream cheese to skillet.
  10. Cook on medium heat until the mixture comes to just a boil, stirring constantly. Simmer for 3 minutes or until the sauce thickens.
  11. Place chicken on rice and spoon sauce over chicken.
