Heath Coffee Cake

This coffee cake is an old favorite from childhood. My mom used to make it for brunch on the holidays and it always was enjoyed by all. It is fairly easy to put together and it comes out super delicious and nice and moist.

Now let's talk about buttermilk. There are sometimes when I just do not want to buy it for one recipe so I have found a way to "make" it. All you need to do it put 1 tablespoon of bottled lemon juice in a measuring glass and then fill the glass with milk up to the 1 cup mark. Let it sit out for 5-10 minutes and then use it in the recipe. I have not noticed a significant difference between "making  it" and buying it. I have also read that you can use vinegar, but have never tried it.

Now there have been some occasions when I buy buttermilk thinking I would use it up, but don't. So I discovered that you can freeze it. Just measure it out into small portions, I did 1/2 cup, and pour it into a freezer safe container and freeze until needed. When you defrost it, it will have separated, but just mix it well and it will be ready to use.

Heath Coffee Cake

Ingredients:

  • 8 tablespoons unsalted butter, cold
  • 2 cups all purpose flour
  • 1 cup brown sugar
  • 1/2 cup 1/2 cup
  • 1 cup buttermilk
  • 1 teaspoon buttermilk
  • 1 teaspoon baking soda
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heath bar toffee bits

Directions:

  1. Preheat oven to 350°F.
  2. In a large bowl mix flour and both sugars.
  3. Cut in butter.
  4. Take out 1/2 cup of the flour mixture and refrigerate until ready to use.
  5. To the rest of the flour mixture add buttermilk, baking soda, egg and vanilla. Mix well and pour into a greased 9x13 pan.
  6. Take reserved flour mixture out of refrigerator and mix in heath bits. Sprinkle over the top of the entire coffee cake and bake for about 30 minutes or until an inserted toothpick comes out clean.
