Green Beans with Tomatoes, Olives and Eggs

 This combination may seem strange to you or maybe it was just me, but I had some trouble wrapping my head around this combination. However, I am willing to try most anything once so I figured what the heck I'll give it a try.

Green Beans with Tomatoes, Olives and Eggs

I'm so glad I did! This dish was delicious and surprisingly all the ingredients went so well together.

Green Beans with Tomatoes, Olives and Eggs

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 1/2 cup grape tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 2 teaspoons olive oil
  • 2 hard boiled eggs, chopped
  • 1/2 teaspoon black pepper
  • 1/2 lemon, cut into 4 wedges

Directions:

  1. Bring a large pot of water to a boil and add the green beans.
  2. Cook for about 3 minutes or until the green beans are crisp-tender.
  3. Remove green beans from boiling water and immerse into a large bowl of ice water to stop the cooking.
  4. Cut the green beans in half and place them in a serving bowl.
  5. Add in the tomatoes, olives, eggs, oil and pepper.
  6. Gently toss to mix all ingredients.
  7. Serve with lemon slices.
