Crusted Honey Mustard Chicken

This chicken adds a nice twist to your traditional breaded chicken. Instead of coating the chicken in eggs, you coat it in honey mustard dressing. Making this one simple change adds a great flavor to the chicken.

This chicken bakes up nice and crispy and by adding additional honey mustard dressing to the top of the chicken it really enhances the honey mustard flavor.

Come to think of it, this chicken is kind of a grown up version of chicken strips. It is an adult way to have chicken strips. And as an added bonus, the kids will still like it as well.

Crusted Honey Mustard Chicken

Ingredients:

  • 1/2 cup lite honey mustard dressing
  • 1/8 teaspoon black pepper
  • 4 green onions, chopped
  • 1 cup panko bread crumbs
  • 1 pound boneless, skinless chicken breasts

Directions:

  1. Preheat oven to 425°F. Place a cooling rack on a baking sheet and spray with cooking spray.
  2. In a small bowl combine the honey mustard dressing and green onions. Remove 1/3 cup and set aside.
  3. Cut the chicken breasts horizontally into 4 equal pieces. Place panko bread crumbs in a shallow bowl.
  4. Coat the chicken breast in the dressing mixture and then coat with panko. Place on cooling rack and repeat with remaining chicken breasts.
  5. Bake for about 15 minutes or until chicken breasts are completely cooked.
  6. Drizzle the chicken with the remaining 1/3 cup dressing mixture you set aside earlier.
