Confetti Chicken Pasta: Savory Sweet and Satisfying

This dish is incredible tasty. It is full of fresh vegetables with a wonderful creamy sauce. The sauce has a very slight kick to it, not much at all, but just enough to add nice flavor.

This dish not only tastes good but it looks good with all of the colorful vegetables. Not to mention how easy it is to customize this dish. You can add in any vegetables you want or have on hand.

Confetti Chicken Pasta

Ingredients:

  • 16 ounces penne pasta
  • 2 tablespoons olive oil, divided
  • 2 boneless skinless chicken breasts, cut into 1 inch cubes
  • 1/4 teaspoon black pepper
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 yellow pepper, cut into thin slices
  • 1 orange pepper, cut into thin slices
  • 2 cups broccoli florets
  • 1 cup grape tomatoes

Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all purpose flour
  • 1 cup half and half
  • 1 cup fat free milk
  • 1/4 teaspoon red pepper flakes
  • 1 cup Parmesan cheese, shredded

Directions:

  1. Cook pasta according to directions and drain.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat.
  3. Season the chicken with pepper. Add the chicken to the skillet and cook until chicken is completely cooked. Remove from skillet and set aside.
  4. Add the remaining 1 tablespoon of olive oil and onions and cook for about 2 minutes.
  5. Add in the garlic and bell peppers cooking for about 2 minutes.
  6. Add in the broccoli and cook until broccoli is bright green, about 5 minutes.
  7. Add the tomatoes during the last minute of the broccoli cook time.
  8. Remove from skillet and set aside with the chicken.
  9. In the same skillet, melt butter over medium heat.
  10. Add in the flour and stir cooking for 1-2 minutes.
  11. Slowly add in the half and half and milk, stirring constantly to prevent any lumps from forming.
  12. Stir in the red pepper flakes and allow to simmer until the mixture starts to boil, stirring constantly.
  13. Once the mixture has reached a full boil and thickened slightly, turn off the heat, add the Parmesan cheese and stir until melted.
  14. Add the pasta to the sauce and mix to completely coat the pasta.
  15. Add in the vegetables and chicken mixing to completely coat everything with sauce.
