Fast and Easy Calzones

I enjoy making homemade pizza, calzones, and other things along those lines. The only downside is having to wait for the dough to rise. That is why I never make them for lunch, it just takes too long. So when I saw this recipe I knew it was worth a try and I could have it for lunch.

Fast and Easy Calzones

The name of this recipe says it all. These calzones are easy to make and they come together fast. The best part is there is no waiting for the dough to rise. Oh, and even better they taste delicious!

You can customize these calzones by adding 1 cup of any cooked meat you choose. In fact you could add any type of pizza toppings you like and change it up every time you make it. My husband has already request I add banana peppers to it next time I make them.

Fast and Easy Calzones

Ingredients:

  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 cup warm water
  • 1 tablespoon active dry yeast
  • 1/2 teaspoon garlic powder
  • 3 cups all purpose flour
  • 1 cup low fat ricotta
  • 1 cup mozzarella cheese, shredded
  • 1 cup turkey pepperoni
  • 1 teaspoon Italian seasoning
  • 3 tablespoons olive oil
  • 3 tablespoons grated Parmesan cheese

For Serving (not included in the nutritional info)

  • marinara or pizza sauce

Directions:

  1. Preheat oven to 475°F. Spray a cookie sheet with cooking spray.
  2. In a large bowl combine the honey, oil, water, yeast and garlic powder together.
  3. Mix in flour.
  4. Once flour is incorporated knead the dough for about a minute or two.
  5. Divide the dough into 6 pieces.
  6. Roll each ball out into an 8-inch circle.
  7. In another large bowl combine the ricotta, mozzarella and pepperoni.
  8. Take about 1/2 cup of filling and place it onto each half of circle. Fold other half of dough over and seal seams well.
  9. Place the calzones on the prepared cookie sheet.
  10. Brush tops of calzones with olive oil and sprinkle with 1/2 tablespoon of Parmesan cheese.
  11. Bake for 10-12 minutes or until golden.
  12. Allow to set for 5 minutes before serving.
  13. Serve with marinara or pizza sauce for dipping.
