I have made plenty of breakfast sandwiches in my time and used various types of breads to make them. I can't believe I never thought to use a croissant. They may not be the healthiest choice, but they sure are delicious and make a breakfast sandwich even better. Next time I make this sandwich, I will have to try sausage instead of bacon.
Bacon Egg and Cheese Croissant Breakfast Sandwich
Ingredients:
- 1 tablespoon olive oil
- 4 slices turkey bacon
- 1 tablespoon unsalted butter
- 4 eggs
- black pepper, to taste
- splash heavy cream
- 2 croissants
- 2 slices cheese
Directions:
- Preheat the oven to 350º F.
- Add the oil to a non-stick pan and heat over medium heat.
- Add in the bacon and cook on both sides until crispy. Transfer to a paper towel lined plate.
- Remove all of the oil except for 1/2 tablespoons. Add in the butter and allow to melt.
- In a medium bowl whisk together the eggs, black pepper and heavy cream. Pour into the skillet and cook and scramble until cooked to your liking, about 3-4 minutes.
- Cut the croissants in half horizontally and place the bottom half on a baking sheet. Top each croissant with cheese followed by bacon and then eggs. Place the top half of the croissant on top.
- Bake for 5-8 minutes or until warmed and cheese is melted.
Enjoy!!!
