Lemon curd is not only delicious, but it can be quite versatile. The sweet and tart sauce goes with many desserts and works with many breakfast items as well. Making it homemade is not only cheaper than buying it at the store, but it tastes so much better. Plus it is easy to make.
Homemade Lemon Curd
Ingredients:
- 2 eggs
- 1 egg yolk
- 1 cup granulated sugar
- 3/4 cup lemon juice, about 4-5 lemons
- 1/2 cup unsalted butter, cubed
- zest of 2 lemons
Directions:
- In a medium saucepan, whisk together the eggs, egg yolk, sugar and lemon juice until well blended.
- Stir in the butter and lemon zest.
- Cook over medium heat stirring constantly, until the sauce thickens and coats the back of a spoon, about 5-8 minutes.
- For a silky smooth texture, use an immersion blender to briefly blend the sauce.
- Pour the sauce into a jar and allow to cool to room temperature.
- Cover the jar and refrigerate until needed.
