I was making a recipe that called for a box of that popular cornbread mix. Since I prefer homemade to boxed mixes, I decided to search for a homemade version. Not surprisingly I found several and already had all of the ingredients to to make it.
Making this cornbread mix allows me to know exactly what is in it and do not have to worry about preservatives. I left out the salt in this recipe to help control the amount of sodium is has. The original recipe contains no sugar, so if you like a sweeter cornbread, you will need to add a bit of sugar.
The amount this recipe makes is the equivalent of one boxed mix. I made this recipe and then used it immediately for the recipe I was making. According to the original recipe, you can make this and store it in an airtight container in a dark cook place for up to 6 months. However, if you plan to store it for a long time, hold off on adding the oil and add it when ready to use.
Homemade Cornbread Mix
Ingredients:
- 1/2 cup all purpose flour
- 1/2 cup cornmeal
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 2 tablespoons canola oil
Directions:
- In a medium bowl, whisk together the flour, cornmeal, sugar and baking powder.
- Drizzle the canola oil over the dry mixture. Using a fork or your hands, blend the oil with the dry ingredients until the mixture becomes crumbly and is evenly mixed with the oil.

Notes:
The original recipe includes 1/2 teaspoon salt mixed with the dry ingredients.
To make muffins with this mix:
Preheat the oven to 400º F. Combine the mix with 1 egg and 1/3 cup mix. Line 6 muffin tin cups with liners and spray lightly with cooking spray. Place 3 tablespoons of the batter into each muffin liner. Bake for 11-13 minutes.
