There are a few flavors that will always catch my attention when looking for new recipes to try. Coffee and toffee are among the top flavors that will always draw me into a recipe. I can not survive without my daily coffee and a Heath bar is one of my favorite candies. I always go for gummy candy over chocolate with the exception of a Heath bar.
These muffins are tender on the inside with bits of melted chocolate chips throughout. The toffee streusel on top adds a bit of delicious crunch to the muffins.
Chocolate Coffee Toffee Muffins
Ingredients:
Chocolate Coffee Muffins
- 2 cups all purpose flour
- 2/3 cup brown sugar, packed
- 1/2 cup unsweetened cocoa powder, sifted
- 1 tablespoon espresso powder
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 6 tablespoons unsalted butter, melted
- 1 1/2 cups buttermilk
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Toffee Crunch
- 1/4 cup all purpose flour
- 2 tablespoons brown sugar
- 1/2 cup toffee bits
- 1 tablespoon unsalted butter, room temperature
Directions:
- Preheat the oven to 375º F. Between two muffin tins, spray 15 cups with cooking spray or line with paper liners.
- In a large bowl whisk together the flour, brown sugar, cocoa powder, baking powder and baking soda.
- In a small bowl, whisk together the melted butter, buttermilk, eggs and vanilla. Pour the wet ingredients into the dry and stir just until combined. Stir in the chocolate chips, but do not overmix the batter.
- Evenly divide the batter between the prepared muffin cups.
- In a small bowl stir together the flour, brown sugar and toffee bits. Using a fork, cut the butter into the mixture until coarse and crumbly. Sprinkle the mixture evenly over the batter, about 1 tablespoon per muffin cup.
- Bake for 20 minutes or until an inserted toothpick comes out clean. Transfer the muffins tins to a cooling rack and allow to cool for 5 minutes. Remove the muffins from the tins and allow to cool completely on a cooling rack.
